Jungle Curry is spicy and hot, but an amazing taste, you just cannot stop eating. It is the only paste that isn't traditionally cooked with coconut milk, but for a milder experience, you can use coconut milk, or yoghurt/cream, to reduce the intensity. Use with Thai Jasmine rice, so the sauce is nicely absorbed, but also great with flatbread.
Thai food is about hitting the right balance of sweet, sour, salty and spicy. It also includes the umami taste element when you include some shrimp paste, fish sauce or soya sauce. It is always best to add a little at a time, you can always add more, but it is difficult to regain the balance if you add too much saltiness or sweetness. Tasting the dish as you cook is the best way to check that you have a pleasing balance, but don't taste too much as there won't be any left for your guests.
