Panang Curry Paste is versatile, traditionally Panang is served as a dry dish, so use less coconut milk, or allow to reduce, however, the sauce is just delicious, so you can also make it into a lighter dish by adding water to give a soup consistency, great with rice noodles.
Thai food is about hitting the right balance of sweet, sour, salty and spicy. It also includes the umami taste element when you include some shrimp paste, fish sauce or soya sauce. It is always best to add a little at a time, you can always add more, but it is difficult to regain the balance if you add too much saltiness or sweetness. Tasting the dish as you cook is the best way to check that you have a pleasing balance, but don't taste too much as there won't be any left for your guests.
