Massaman Chicken legs with potato, onions and peanuts

Ingredients


35g Mae Jum Massaman Curry Paste - Order your Mae Jum Paste

400g Coconut Milk

300g Potato

200g Onion

630g Chicken Drumsticks

50g Roast Peanuts

50g Baby Tomatoes

50g Gooseberries


Seasoning (to taste)


½ tbsp Fish Sauce

1 tbsp Palm Sugar (light brown sugar or coconut sugar)

300g Water


Preparation


Chop the potato, onion, gooseberries and baby tomatoes in half


Cooking Instructions

  1. Add 200g of the creamy layer of the coconut milk into a large saucepan and bring to a light boil

  2. Add Mae Jum Thai Massaman Curry Paste and blend thoroughly until sauce is smooth

  3. Add the fish sauce and palm sugar to taste

  4. Add the Chicken Legs and let it cook for 5 minutes

  5. Add the potatoes, peanuts and the rest of the coconut milk into the mixture and leave to cook for 20 minutes

TIP If you see the sauce getting dry, add 300g of Water

6. Add the onion and let it cook for 5 minutes

7. Lastly, add the cherry tomatoes and gooseberries then turn off the heat

8. Serve hot with freshly made Thai fragrance rice

9. Enjoy, it’s delicious
