Thai Panang Noodle Soup with Pork, Pak Choi and Cherry Tomatoes

Thai Panang Noodle Soup with Pork

Ingredients

10g Mae Jum Panang Curry Paste - Order your Mae Jum Paste

100g Coconut Milk

10g Pork

60g Rice Noodles

50g Cherry Tomato

50g Pak Choi


Seasoning (to taste)

1 tsp Fish Sauce

½ tsp Palm Sugar (light brown sugar or coconut sugar)

200g Water


Preparation

  1. Put the noodles in a saucepan filled with water halfway and let it boil for 7 minutes. Then drain and refresh under cold water.

  2. While Cooking the noodles, thinly slice the pork and chop the baby tomatoes in half


Cooking Instructions

1. Add 50g of the creamy layer of the coconut milk into a large saucepan and bring to a light boil2. Add Mae Jum Thai Panang Curry Paste and blend thoroughly until sauce is smooth.3. Add the fish sauce and palm sugar to taste.4. Add the Pork into the mix and let it cook for 3 minutes.5. Add the rest of the coconut milk and add 200g of water and let it boil.

6. Lastly add the Pak Choi and Cherry tomatoes into the saucepan and let it cook for 3 minutes.


7. Finally put the soup into a bowl with the cooked noodles already in it.


8. Enjoy, it’s delicious.
