Thailand has the perfect weather for vegetation, and most out of town households grow their own vegetable and herbs. Vegetables are often eaten raw, including leaves from various plants, as an accompaniment to other dishes, and a way of cutting the spiciness of dishes. Some vegetables are bitter and play an important part in the balance of flavour. Other than this, most dishes include at least one vegetable, with meat playing a minor role as it is generally more expensive.
Thai food is about hitting the right balance of sweet, sour, salty and spicy. It also includes the umami taste element when you include some shrimp paste, fish sauce or soya sauce. It is always best to add a little at a time, you can always add more, but it is difficult to regain the balance if you add too much saltiness or sweetness. Tasting the dish as you cook is the best way to check that you have a pleasing balance, but don't taste too much as there won't be any left for your guests.
